Introduction to working with chocolate

In this two hour workshop we will take the mystery out of working with chocolate. The main focus is tempering chocolate, the basic skill to working with the "Food of the Gods". Why do we temper chocolate? What does un-tempered chocolate look like? Your questions will be answered when you learn to temper chocolate via the "Seeding Method". We will show you how to make simple chocolates using molds and introduce piping.

Introduction to making Truffles

In this two hour workshop you will create wonderful, delicious, yummy and rich truffles. At the core of the class is the understanding of ganache. You will use simple recipes for dark, milk and white chocolate. Play with different flavours as well as learn different decorating techniques, maybe even discover some tricks of the trade.
